Kopi Luwak (most expensive of coffee)

Kopi Luwak or Civet Coffee (Paradoxaurus hermaphroditus) is one of the most expensive low production of coffee, it couldn’t production actually it’s natural from feces of the civet, gathering by the farmer then it has different taste than any coffee that made by human. It is made from the beans of the coffee berries which have been eaten by the civet. Even better, it has unique taste because being process in civet’s stomach.

In its stomach, proteolytic enzymes seep into the beans, making shorter peptides and more free amino acids. Passing through the civet’s intestines the beans are the defecated, keeping their shape. After gathering, through washing, sun drying, light roasting and brewing, these beans yield an aromatic coffe with much less bitterness.

Kopi luwak mainly brought from highland area such as, Batu Rotok, Tepal, and some villages that plant coffee as their most commodities to sell to other town or even importing it to another country.

Things that made Coffee Luwak expensive is because the way and process itself to get it, the farmer pick it from the ground or where the Civet eat or poop in the night, before selling it they have to gather it to the big sack (grain sack) until the sack is full or filling to specific amount.

And the next is how to process it, generally by separating it from the whole shape, wash it till clean, dry it, roasting to the full sun that made coffee luwak as the delicious coffee in the world.
